An easy trick to a great Bisque is to use Medium Picante Sauce to season it. It gives just enough spice, but not too much.
Simple lobster bisque recipe that can be made with fresh or canned lobster meat:
12 ounces of lobster meat
6 tbsp butter
3 tbsp flour
3 cups of cream
1-2 tablespoons Medium Picante Sauce
1 tsp sea salt
Melt the butter in a saucepan, add the lobster meat, and cook over moderate heat for 3 minutes, stirring constantly so the butter doesn’t burn. Stir in the flour, and add the cream, and picante sauce to taste. Stir constantly until soup is slightly thickened and very hot. Just before serving sprinkle with paprika, salt and pepper.
