*I adapted this recipe from The Changeable Table
They used green onions instead of caramelized onions and poppy seeds. Poppy seeds are hard to find for me.  However, you could certainly use green onion and poppy seeds, but you would need 1/2 cup of butter to drizzle on the bread. And the original recipe did not include a dipping sauce.
Ingredients:
1 unsliced loaf sourdough bread
12-16 ounces Monterey Jack cheese, thinly sliced
1/4 cup butter, melted
1 onion slice thinly & saute in butter until caramelized
Directions:
Preheat oven to 350 degrees.
Cut the bread lengthwise and widthwise without cutting through the bottom crust. This can be a little tricky going the second way but the bread is very forgiving.

Place on a foil-lined baking sheet. Insert cheese slices between cuts. Combine butter, and caramelized onion.  Drizzle over bread. Wrap in foil; place on a baking sheet. Bake at 350 degrees for 15 minutes.
Unwrap the bread and bake 10 more minutes, or until cheese is melted.

Dip:

  • 1/2 cup mayonnaise
  • 1 tablespoon ketchup
  • 2 tablespoons cream-style horseradish sauce
  • 1/3 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon dried oregano
  • 1 pinch ground black pepper
  • 1/3 teaspoon cayenne pepper
